Y si hablamos de grasas ricas, qu\u00e9 mejor que unos buenos torreznos. Tras unos a\u00f1os de olvido por aquello de la preocupaci\u00f3n por el peso y por el colesterol, vuelven a ocupar su lugar en las barras e incluso en algunos sitios como Madrid se han puesto de moda.<\/p>\n<p>No se preocupen en exceso, los cocineros ahora utilizan t\u00e9cnicas que reducen notablemente la cantidad de grasa. Ya sabr\u00e1n ustedes que los m\u00e1s c\u00e9lebres son los de Soria, tan importantes all\u00ed que incluso est\u00e1n amparados por una marca de garant\u00eda, Torrezno de Soria.<\/p>\n<p>Pocas cosas hay aparentemente m\u00e1s sencillas de elaborar. Panceta de cerdo adobada con sal y piment\u00f3n y frita. Dicho as\u00ed parece f\u00e1cil, pero no debe serlo tanto cuando resulta tan complicado encontrarlos buenos. Las claves: la calidad de la panceta (mejor si es de ib\u00e9rico), la habilidad en el adobo y la buena mano del cocinero para lograr ese punto en el que la piel est\u00e1 bien hinchada, dorada y crujiente, nunca dura ni correosa. Y que lleguen a la barra o a la mesa sin chorrear grasa.<\/p>\n<p>No conozco a nadie a quien no le guste un buen torrezno. Otra cosa es que no los coma por aquello de que engordan. Sin embargo, vale la pena hacer de cuando en cuando una excepci\u00f3n. En estos tiempos en los que acercarse a las barras es misi\u00f3n casi imposible por las restricciones que impone la pandemia, siempre pueden comprarlos por Internet para comerlos en casa. Los venden ya precocidos, listos para pasar unos minutos por la sart\u00e9n.<\/p>\n<p>Hay varias marcas, pero comprueben siempre que lleven la marca de garant\u00eda. Y cuando llegue la normalidad, aprovechen para visitar Soria y hacer all\u00ed una ruta de bares. Me gustan los del cl\u00e1sico Mes\u00f3n Castellano, en la Plaza Mayor, y muy especialmente las \u2018almitas\u2019 de la Cervecer\u00eda Torcuato, torreznos cortados en l\u00e1minas muy finas. Y en la provincia, los de Virrey Palafox, en Burgo de Osma.<\/p>\n<p>M\u00e1s direcciones: Essentia (Taranc\u00f3n), El Molino de Alcuneza (Sig\u00fcenza) y ya en Madrid, donde como les dec\u00eda, se han puesto de moda, los de La Raquetista, Treze o El Fog\u00f3n de Trif\u00f3n.
